This green bean and potato salad is a delicious and easy way to make a summer dish. The key to this salad is to use fresh ingredients and to cook the potatoes until they are just tender. I like to use a mixture of Yukon gold and red potatoes for this dish, but you can use any potato you like. The other important thing is not to overcook the green beans. You want them to be crisp and tender, not mushy. I typically use about 1/2 pound of green beans for this salad, but you can adjust the amount based on your preference. Finally, the dressing for this salad is a simple mixture of olive oil, lemon juice, and Dijon mustard. I like adding a bit of freshly chopped herbs to the dressing, but you can use any combination of herbs you like. This green bean and potato salad is the perfect side dish for a summer BBQ or picnic.
