Delicious Vegetarian Sandwich
This vegetarian chickpea sandwich filling is not only delicious but it’s also packed with protein and fiber. To make the filling, combine cooked chickpeas, diced onion, celery, mayonnaise, mustard, and salt and pepper to taste. You can add some chopped dill or chives for a little extra flavor. This filling is great on its own or as part of an enormous sandwich. I like to pair it with fresh greens and tomato on whole grain bread for a satisfying and nutritious meal.
